Add wine to the water to soften the octopus, turning for about 1′. Remove and soak in cold water until crisp. Cool octopus, cut to taste.
Put oil in a pan, saute garlic and minced onion. Add tomatoes and salt, stir well, add sugar + chili sauce + stir-fried spring onion 1′. Then add minced chili + butter to the island, stir-fry octopus on high heat so that the water does not come out. Close the lid for 2′, add a little more butter to taste.
