Thinly sliced ginger. Sliced scallions, smashed lemongrass. Shredded lemon leaves, put them all on a plate. Squid made and washed to arrange on a plate of lemongrass. In a bowl, mix 1 tbsp fish sauce, 3 tbsp lemon juice, 1.5 tbsp sugar, 1/4 tsp pepper, 2 tbsp minced garlic chili, 1 tbsp minced cilantro.
